Pilsbury So-Easy Lemon Bars

Ingredients:

1 roll (18oz) referigerated sugar cookie dough

4 eggs, slightly beaten

1 1/2 cups sugar

1/4 cup all-purpose flour

1/4 cup lemon juice

1 tsp. baking powder

1 to 2 tbs. powdered sugar

Directions:

1. Heat oven to 350 degrees farenheit. Slice cookie dough as directed on package. Arrange slices in bottom of ungreased 13×9 in. pan. With lightly floured fingers, press dough evenly in pan.

2. Bake 15 to 20 minutes or until light golden brown. meanwhile, in large bowl, stir together eggs, sugar, flour, and baking powder. Stir in lemon juice. Pour mixture over warm crust.

3. Bake an additional 20 to 30 minutes or until top is light golden brown. Cool completely, about 1 1/2 hours. Sprinkle with powdered sugar. For bars, cut into 9 rows by 4 rows.

Notes:
Actually, this makes 36 bars.  For more flavor, lemon zest may be added with the juice.
