8 chicken breast halves, cooked and cubed
1 1/4 cups diced celery
4 hard boiled eggs, chopped
Juice of one lemon
salt to taste
Paprika to taste
1/2 teaspoon white pepper
1 1/2 cups mayonnaise
3/4 cup chopped pecans
1. Combine chicken, celery, eggs, lemon juice, seasonings and mayonnaise. Refrigerate overnight.
2. Stir in chopped pecans and adjust seasonings just before serving.
3. Slice croissants and warm uncovered in 350 oven for 5 to 8 minutes.
4. Fill warm croissants with a generous portion of chilled chicken salad.
